Almond Joy Cookies


A few weeks ago, I made this recipe up and brought these into some friends at work.

They were quickly gobbled up and throughly enjoyed (if I do say so myself)!


Almond Joy cookies

2 sticks unsalted butter, at room temperature
1 cup packed dark brown sugar
1/2 cup granulated sugar
2 tablespoons apple sauce
1 teaspoon vanilla extract
1 large egg
2 3/4 cups all-purpose flour
1/2 teaspoon kosher salt
1 1/4 teaspoons baking soda

Heat oven to 375° F. Line two baking sheets with parchment paper or aluminum foil. With an electric mixer on medium-high, beat the butter, brown and granulated sugars, corn syrup (I used an equal amount of applesauce instead), and vanilla for 3 minutes. Add the egg and beat until combined. In a separate bowl, whisk together the flour, salt, and baking soda. Reduce mixer speed to low and slowly add the flour mixture to the egg mixture.


Add a few handfuls each of sliced almonds, coconut shreds, and dark chocolate chips and mix until incorporated. Form the dough into tablespoon-size mounds. Place on the prepared baking sheets, 2 inches apart.


Bake until lightly browned at the edges, 12 to 15 minutes.


Now, go make some for yourself and eat them very quickly before you actually start on your resolution to lose weight (not that you need to lost weight or anything, I've been meaning to tell you that you've been looking fabulous lately)!

You are so cute!! I love that you posted this recipe. I really can't let myself eat one more sugary bit at the moment, but I will remember this for the next occasion. Like maybe this weekend, for my sister in law's birthday?!
